Mossfire Ranch, Paso Robles
Harvested on August 28, 2017 at 20.5 Brix from Mossfire Ranch in Paso Robles, this was an intentional Rosé made in the provincial style. Freshly harvested grapes were pressed immediately to avoid extracting color and tannin from the Syrah grapes. The settled juice was fermented cold (<60F) for 30-40 days to ensure an expression of tropical and floral aromas. Aromatically, our 2017 Rosé is driven with Strawberry and White Flowers with subtlties of peach and other stone fruits. The palate is dry with nice weight and full of red and white berry with slight tropical flavors framed with refreshing acidity. Pair with summer salads with fruits and chevre. Or, get adventurous and have with Central American inspired ceviche.
