Sangiovese, 2015, White Hawk

Our 2015 Sangiovese was harvested on September 12, 2015 from the hilltop at White Hawk Vineyard. This sandy, exposed site, yields dense and concentrated fruit. Our Sangiovese was sorted and transferred to a 3T open top tank for a three day cold soak followed by a long and cool fermentation. Post fermentation the wine was gently racked to 50% new French and American oak for 15 months. The wine was never racked while in barrel and was gently transferred to tank via nitrogen gas prior to bottling on March 31, 2017. Aromatically, our 2015 Sangiovese is driven with bright red and blue fruit structured with coffee, toffee, and other lovely oak notes. On the palate, flavors of ripe raspberry, bay, and carmel dance and beckon this wine to be paired with Italian cuisine or a fire out back.
